It's back to school time for many families with school aged children and sending them back to school might mean sore throats and sniffles. This is the time of year when I make sure my kids are extra diligent about washing their hands, drinking lots of water and I pull out my soup pot. Home made chicken soup has always helped me manage the cold/flu season and cut down on illness in my home. Here is the simple recipe I use for my pot of "magic."
Sautee onion and garlic in pot. Add roast chicken leftovers, 6-8 cups of water, seasonings, fresh kale/spinach. Cook for about 5 minutes on medium. Squeeze fresh lemon and cook on medium/low for 15 minutes. Add pasta, I prefer angel hair, and cook for additional 10-15 minutes. Add additional water and seasonings to taste. Enjoy and stay healthy!
